Prep
Use a sharp knife to slice carrots into 1/4" thick bias cuts
Instructions
Spray a skillet with cooking spray and place over medium heat
Once the skillet is hot, add the sliced carrots. Sprinkle salt and oregano over top and drizzle with olive oil
Stir together and saute for 5-6 minutes, or until tender
Remove from the heat and sprinkle with pepper and additional salt
